Heritage Mills Recipes
50% Whole Wheat Bread (Bread Machine)
Put the following ingredients into the bread machine in this order and select a setting of 3 ½ hrs.
- 1 ½ cups warm water
- 2 tbsp milk or powdered milk
- 2 tbsp shortening
- 3 tbsp sugar
- 1 tsp salt
- 2 cups Heritage Mills whole wheat flour
- 2 cups all purpose white flour
- 2 tsp rapid yeast
Rye Bread
Mix together and let proof:
- ½ cup warm water
- 1 tbsp yeast (not rapid)
Add the yeast mixture to the following ingredients:
- 3 cups rye flour
- 2 tsp salt
- 1 cup Heritage Mills whole wheat flour
- 2 ½ cups water
- 3 cups white flour
Knead well. Let rise 3 hours in a warm place. Punch down and let rise 1 hour on a greased cookie sheet. Form a single loaf or 2 smaller ones. Let rise 20 min. Bake at 500 F for 10 min. Lower heat to 400 F and bake 20 min longer.
Heritage Mills 100% Whole Wheat Bread (Sponge method)
Place 4 cups lukewarm water into a large bowl, stir in 1 tbsp. honey or brown sugar till dissolved, sprinkle in 2 tbsp yeast (not instant) and let stand until yeast becomes active.
Add 3 cups Heritage Mills whole wheat flour and beat with a spoon or whip to a smooth batter. Let stand until bubbly, approximately 10 minutes.
Then add:
- 4 tsp salt
- 3 tbsp honey or brown sugar
- 1/4 cup oil
- 1 tbsp lecithin (optional)
- 5-6 cups Heritage Mills whole wheat flour
Knead approximately 300 times and, while kneading, add more flour if needed to make a non-sticky dough. Cover dough and keep it warm and away from drafts. Let rise until double in size. Cut into equal pieces and form into loaves. Let rise in small pans until not quite double in size. Loaf should rise 1/2 to 1 inch in the oven. Will make either 2 medium loaves or 4 small loaves. Bake at 375 F for about 45 minutes, depending on the oven.
Tender Pie Crust
Combine the following in a blender and blend till frothy.
- 1/2 cup oil
- 1/2 cup water
- 1-2 tsp lecithin
- 1 tsp salt
Add 2 cups Heritage Mills whole wheat flour and work it in with as little kneading as possible. Roll between plastic, remove plastic and put into pan. Makes 2 crusts
Quick Brown Biscuits
Mix the following:
- 1 cup Heritage Mills whole wheat flour
- 1 cup all purpose white flour
- 4 tsp baking powder
- 1 tsp salt
With a pastry blender or 2 knives cut in ½ cup shortening
Add 1 cup milk
Stir with a fork to make a soft dough
Turn out onto a lightly-floured surface and gently knead 8 to 10 times
Roll to desired thickness
Bake at 425 F degrees for 12 -15 min
